Do not rinse or wash cauliflower or rice will be too wet. Cut cauliflower florets into large chunks.
In a food processor pulse half of the cauliflower until rice like. Pulse the remaining cauliflower into rice.
On medium heat in a medium sized frying pan, add vegetable oil.
When oil is shimmering, add garlic until browned about 2 minutes.
Add diced red pepper to garlic on frying pan for 2 minutes to start cooking.
Add riced cauliflower to frying pan. Add 2 teaspoons lime juice and salt. Stir.
Cover and cook for 5 - 8 minutes until cauliflower rice is tender. Remove from heat.
Add remaining 2 teaspoons lime juice. Stir in lime zest and cilantro.
Add salt and pepper to taste. Enjoy!
